Santoku
The Santoku is the Japanese brother of the Western Demi Chef. The meaning of "Santoku Bocho" means "three virtues" or "three uses" and of course refers to the three cutting tasks the Santoku excels at: slicing, dicing and chopping.Because of its smaller size, it is easier to use in private kitchens. If you are looking for a multipurpose workhorse, this is the one. When you are done, you can use the blade of the knife as a spatula to bring your freshly cut yummies to your cooking pot.
