The Santoku is the Japanese brother of the Western Demi Chef. The meaning of "Santoku Bocho" means "three virtues" or "three possible uses" and of course refers to the three cutting tasks in which the Santoku excels: cutting slices, dicing and chopping.
Due to the smaller dimensions, it is easier to use in private kitchens. If you are looking for a multifunctional workhorse, this is the only one. No task is too difficult for this 'bad boy'.
With one tool you can now eminate, make juliennen and brunoise like never before. And when you're done, you can use the blade of the knife as a spatula to bring your freshly cut yummies to your cooking pot.

1.4109 stainless steel is used by the modern shaving industry, which is an obvious choice for me as a knife maker to make knives from.
This steel shines when we talk about corrosion resistance. Similar to its brother EAB-L, it will take a cut like you have never experienced on a stainless steel knife!
Regarding the finish of the blade I like to surprise my dear customers with original stuff, so I finish these knives with my Mystic Mist blade finish.
